Happy Autumn everyone! Here in the East bay, we are enjoying the very last harvest of our summer garden as the autumn weather begins to cool our days.

Drying our excess tomato harvest allows us to enjoy these garden gems “sun dried” style in sauces and soups all winter long.
I have been experimenting with drying times in our new dehydrator, but you can just as easy spread out tomato halves or slices on a baking sheet and dry them on your oven’s lowest temperature setting. I find it usually takes 4-6 hours, depending on their size and desired dryness. They can be stored in the fridge or freezer and enjoyed until the warm weather returns!
